There are two things I miss being vegan: Portuguese food and Ice Cream sundaes. Portuguese food is pretty much impossible to duplicate into a vegan version, but there are tons of vegan ice cream products in the market. Problem is, most of them are filled with chemicals and junk we just don’t eat, so my life has been sadly sundae free. Back in my “cow milk” days as Zoe would call them, I used to devour banana splits whenever I got the chance. Well, my husband is a genius. He came up with an amazing ice cream free desert that fills the void in my stomach.
The first step is to cut up banana into rings; I find that a banana and a half is the perfect amount.
